Beat eggs, cream, cottage cheese, salt and pepper together until evenly combined. This is super easy in a blender! You'll get a lot of air if you use the blender instead of a whisk. The more air, the fluffier your egg bites will be. :)
Lightly spray silicone egg bites mold with non-stick cooking spray.
Add a tablespoon of shredded cheese to each egg mold.
Add about ½ piece of cooked bacon (in bite sized pieces) to each egg mold. Make sure that you do not overflow the egg bite mold with the ingredients.
Gently stir each egg mold until ingredients are well combined.Cover filled egg bites mold with foil.
Pour 1 cup of water into the Ninja Foodi insert pot.Place a trivet into the Ninja Foodi and lower your filled egg bites mold onto the trivet. Or use a silicone sling. If you use the sling, place the filled egg bites mold into sling and lower into Ninja Foodi insert pot. You do not need to use a trivet if you use the silicone sling.
Close pressure cooking lid and move valve to "seal" position.
Turn Ninja Foodi On and choose pressure cooker setting. Choose "low" and change time to 8 minutes. Push start.
If you are cooking more than one tray of egg bites at the same time, add 1 minute for each additional tray.
When timer beeps, let pressure naturally release for 5 minutes and then quick release remaining pressure.
Open pressure cooker lid and remove egg bites from Ninja Foodi.Remove foil and let cool for 2 minutes.Place a plate on top of egg bites and flip the egg bites onto the plate. You may need to tap or gently push the egg bites out of the mold.
