When my 12 year old requested that we have a new and exciting chicken dish for dinner……I was shocked. Her normal request for EVERY SINGLE MEAL is steak! Yes! Chicken it is! Since she came up with the idea to make chicken, she actually jumped in and helped me prepare dinner! Because I had a little helper, this ended up being one of my favorite meals that I have cooked so far!
Oh….the fact that it was incredibly DELICIOUS helped make this one of our favorite meals too! ๐ We had no leftovers!
Creamy chicken in the Ninja Foodi will for sure be added to our regular rotation of dinners. It was a hit! Enjoy!!
I still can’t believe that my picky kiddo ate pesto and roasted red peppers!!!! Ok, well, to be honest, she had no idea there was pesto in it because it was mixed so well in the cream sauce. But, after she ate it, I told her.
Since then, she asked me to make her another pesto pasta dish! What? Look at her being adventurous! Ok, but seriously, this dish is that good!
Tips for making this recipe:
1.If you like your chicken extra saucy or are planning on combining with pasta, double the recipe. I helped you do that by adding in a section in the ingredients that says :if you like a lot of sauce with your chicken.” Follow those instructions. ๐
2.If you have picky eaters, don’t tell your kids that there is pesto and roasted red peppers in this recipe for creamy chicken. Those ingredients might sound a little scary to picky eaters. Before you know it they will have eaten ALL of it without knowing what the ingredients are!
3.When you make a corn starch slurry, or any slurry, use a mason jar. I started doing this a few years ago and it completely changed my gravy making! I went from having the lumpiest sauces and gravies in town to having smooth, creamy sauces in no time. Just add the water and corn starch, or flour if you prefer, to the mason jar and start shaking! Shake, shake, shake!!!!! Voila! Smooth gravy every time!
Instructions:
1.Place the chicken breasts into the Ninja Foodi pot and pour in 1 cup of chicken broth.
2.Sprinkle 1.5 teaspoons of Italian seasoning on to the chicken. It’s ok if it doesn’t evenly coat the chicken. Spread 1.5 teaspoons of minced garlic on to chicken. It’s ok if it’s not evenly spread out. Add ยผ teaspoon of salt and a ยผ teaspoon of pepper.
3.Close the “pressure cooker” lid. Move valve to “seal” position. Choose the “pressure” option and set time to 7 minutes. When timer beeps, naturally release pressure for 5 minutes. After 5 minutes, quick release remaining pressure and carefully open lid.
4.Remove chicken from pot using tongs. Set chicken aside.
5.Turn Ninja Foodi on “sauté” high for 15 minutes.
6.Pour in ยฝ cup diced red peppers and stir. Pour in ยฝ cup of heavy cream. Add in 1.5 tablespoons of pesto.
7.Make corn starch slurry by combining 1.5 tablespoons of corn starch with 2 tablespoons of water. I like to add the ingredients to a small mason jar and then shake it like crazy! Comes out lump free every time! :). Pour in corn starch slurry and stir. Allow sauce to sauté for about 5 minutes. Be sure to stir regularly.
8.Once sauce has achieved desired thickness, add chicken back in or serve by pouring gravy over chicken.
9.Serve with your favorite side dishes. We really like to serve with pasta! After the pasta is cooked, I’ll usually add it into the sauce with the chicken right in the pot. All of the pasta gets coated in the creamy delicious goodness! Yum!!!

I tried to make a healthier version by using half and half instead of heavy cream and it didnโt turn out great. Was unfortunately not very flavorful and the half and half seemed to curdle slightly ๐

Everyone in my family of 3 enjoyed this dish as shown by making a trip to the kitchen for seconds. I used fresh red bell pepper because that is what I had on hand. Otherwise, I followed the recipe as written for a lot of sauce. I would never make it with the ‘little sauce’ amounts. I used 3 med-large chicken breasts and served it with angel hair pasta and steamed zucchini and yellow squash with garlic/herb seasoning. We have enough left over to serve lunch for 2 tomorrow.

The chicken was very tough. I think chicken gets tough ion the Ninja if you cook it too long. Tasted good, though. If chicken was tender, wold be great.

I’m glad that it tasted good! SOrry to hear that your chicken turned out tough. Sometimes it depends on the size of the chicken breasts that you are using. Next time, try to reduce the pressure cooking time by a minute or two if you are using smaller chicken breasts.

Oh no! I’m sorry to hear that. I generally use pretty big chicken breasts so that might have made the difference. If you are using smaller chicken breasts, you can reduce the pressure cook time by a couple of minutes.
