If you have been to Starbucks or ever been on any pressure cooking site, you likely have heard of egg bites and have seen how crazy everyone goes for these adorable little egg bites. Why are these little egg bites such a big deal? Well, for starters they are so cute!!! But, outside of appearances, they are delicious, quick and easy to make and maybe the best thing of all is that you can make them ahead of time and refrigerate or freeze them for use later in the week!
In just a matter of minutes, you can have fluffy, cheesy eggs for breakfast! Pair these Ninja Foodi egg bites with toast, biscuits, english muffins, granola or yogurt! What’s your favorite pairing?
Egg bites are the perfect way to start off the day as you are heading to the office or your kids are heading to school. Your morning routine just got easier! Think of how much time you can save in the morning!
One of my favorite things about these Ninja Foodi egg bites is the opportunity to customize them. You can literally put anything that you would like in them! If you prefer egg whites, use egg whites. If you prefer swiss cheese, use swiss cheese. If you like mushrooms and green peppers, add them! If you prefer sausage, add in little bits of cooked sausage instead! Literally, the possibilities are endless. I would recommend switching it up and making a new combination each week! Have fun experimenting!
If you have a picky eater in your house, get them involved in the making the Ninja Foodi egg bites! Sometimes picky eaters like the process of making their own creation and seeing how it turns out. ๐ Let them pick their own ingredients and add them to the cute little egg molds. Breakfast just got a little more enjoyable! ๐
Tips for making this recipe:
1. If you don’t like cottage cheese…..don’t panic! I personally do not like cottage cheese (AT ALL!!) but went ahead and added it to the recipe to try it out. To my amazement…..you could not tell there was cottage cheese in the egg bites! (THANK GOODNESS!!). The texture was that of a normal egg and the flavor was awesome!
2.Get creative! There are so many ingredients that you can add to your egg bites! Try different cheeses, different meats and add your favorite veggies! Oh the possibilities are endless!
3.If you have more than one egg bite mold, you can stack them on top of each other as long as you cover them with foil. Instead of making 7 egg bites, you can make 14! ๐
4.Once cooked, egg bite molds will last up to a week in the refrigerator and up to 3 month in the freezer.
5.To refrigerate, allow egg bites to cool and then place in a ziplock bag. Refrigerate up to a week. When ready to eat, remove from refrigerator and microwave for 15-30 seconds.
6.To freeze, allow egg bites to cool and then place in a ziplock bag. Freeze for up to 3 months. When ready to eat, remove from freezer. Place on a microwave safe plate and cover with damp paper towel. Cook on “defrost” for 1.5-2 minutes or until hot.
Instructions:
1.Beat eggs, cream, cottage cheese, salt and pepper together until evenly combined. This is super easy in a blender! You’ll get a lot of air if you use the blender instead of a whisk. The more air, the fluffier your egg bites will be. ๐
2.Lightly spray silicone egg bites mold with non-stick cooking spray.
3.Fill egg bites mold ยฝ of the way full with egg mixture.
4.Add a tablespoon of shredded cheese to each egg mold.
5.Add about ยฝ piece of cooked bacon (in bite sized pieces) to each egg mold. Make sure that you do not overflow the egg bite mold with the ingredients.
6.Gently stir each egg mold until ingredients are well combined.
7.Cover filled egg bites mold with foil.
8.Pour 1 cup of water into the Ninja Foodi insert pot.
9.Place a trivet into the Ninja Foodi and lower your filled egg bites mold onto the trivet. Or use a silicone sling. If you use the sling, place the filled egg bites mold into sling and lower into Ninja Foodi insert pot. You do not need to use a trivet if you use the silicone sling.
10.Close pressure cooking lid and move valve to “seal” position.
11.Turn Ninja Foodi On and choose pressure cooker setting. Choose “low” and change time to 8 minutes. Push start.
12.If you are cooking more than one tray of egg bites at the same time, add 1 minute for each additional tray.
13.When timer beeps, let pressure naturally release for 5 minutes and then quick release remaining pressure.
14.Open pressure cooker lid and remove egg bites from Ninja Foodi.
15.Remove foil and let cool for 2 minutes.
16.Place a plate on top of egg bites and flip the egg bites onto the plate. You may need to tap or gently push the egg bites out of the mold.

- ยผ Cup of cottage cheese
- ยผ Cup of heavy whipping cream- For a healthier version, you can substitute any kind of milk or omit
- ยผ Teaspoon salt
- Pepper to taste- about a ยผ Teaspoon if desired
- ยฝ Cup of shredded cheese
- 3 strips of cooked bacon- cut into bite sized pieces

I haven’t tried this recipe yet. do I have to add cottage cheese? I thought I could just beat some eggs, add salt and pepper, pour into molds and be done.

You do not have to use cottage cheese. But it does help make the egg bites a little fluffier instead of dense. If preferred, you can skip the cottage cheese.

How do you get 7 tablespoons of cheese from half a cup?

Hi Fred- I measured out 1/2 cup of cheese into a measuring cup and then used a tablespoon to scoop the cheese into the egg bite molds. The measurement is by volume. 1/2 cup equals 8 tablespoons. So, technically, there will be a little bit left over but I just add that to the egg bites too. ๐

Hi Dany- I haven’t tried using cupcake molds yet. As long as they are sturdy enough so that they don’t fall over or leak over the edges, they should work. Based on the size of the cupcake holders, you might have to adjust the cook time.

I tried this recipe and it was soooo easy! I used 2 silicone egg bite trays with lids, and steamer rack trivet. Perfection at its best!! This was my very first time making these too!!

Just out of curiosity, is there a reason you use foil to cover them? If the egg bite mold comes with a lid, could you use the lid with it?

Some of the egg bite molds come with a silicone lid and some come with a plastic lid. Plastic cannot go in the Ninja Foodi, but silicone can. Just to be safe, I use foil. If you are 100% sure that your lid is silicone and not plastic, you can use it instead of the foil. ๐
