Meatloaf! It’s what’s for dinner! Growing up, my mom made meatloaf……it quickly became one of my least favorite meals. I just could not get on board with the idea of eating a humongous hamburger patty with ketchup on it. I couldn’t do it and I have not been able to get to a place where I can eat meatloaf since then.
I have seen so many rave reviews and requests for Meatloaf recipes and Luis loves meatloaf (he even orders it out at restaurants!!). So, I thought I’d give it a try and make it for Luis. Happy husband=happy life!
In all honestly, I planned on making this a week ago and could not get myself to do it because I did not want to eat it! I finally took the plunge and made Meatloaf and Mashed Potatoes this past weekend.
I gave myself a heaping serving of mashed potatoes and a very small helping of the meatloaf. I ate it….and I actually liked it. Don’t’ tell Luis, but I almost understood his love for meatloaf. I haven’t eaten meatloaf in 30 years.
This recipe was a game changer for me. The combination of the ketchup with the bbq sauce, mustard and brown sugar made for a deliciously sweet and savory crust on the top. I went back for seconds and considered eating the leftovers the next day. Luis beat me to them.
Tips for this recipe:
1.Use a low fat percentage ground beef if you care about what it looks like in the pan. I used 80/20 and the higher fat content caused the meatloaf to shrink drastically. The flavor was great, but the presentation was not.
2.If you don’t have one of the nifty silicone baking slings, use foil. I took a piece of foil and folded it up into a 2 inch strip and placed it under and around the pan so that I could easily lift the pan in and out of the pot. Without this, I would have struggled to get the pan out of the Ninja Foodi.
3.Sauté your onions before adding them to the meatloaf mixture. The caramelization on the onions adds so much flavor!
4.Make extra sauce for the top. I loved the sauce and would have liked a little extra to dip the meatloaf in.
5.Save your leftovers! When you are ready to eat, reheat in a frying pan with a little bit of butter. This method (in comparison to microwaving) will add flavor and a bit of crusty texture. Yumm!
How to make Meatloaf and Mashed Potatoes in the Ninja Foodi
Mashed Potatoes
1.Peel and quarter the potatoes
2.Place potatoes in the bottom of the Ninja Foodi pot- make sure they are evenly spread out and laying flat
3.Add chicken broth
4.Place the trivet or metal rack on top of the potatoes- make sure the trivet is level
5.Make the meatloaf and follow meatloaf cooking instructions- instructions are below
6.After you remove the meatloaf from the Ninja Foodi- remove the trivet
7.Leave the potatoes in the Ninja Foodi- make sure the pot is turned off
8.Mash the potatoes- do NOT use a metal masher. Be sure that you use a plastic masher or you will destroy your inner pot.
9.Add butter, milk and salt- Stir
10.Enjoy! ๐
Meatloaf
1.Add all meatloaf ingredients to a large mixing bowl. Mix ingredients until evenly combined. You can use your hands or a mixer. Be sure that you do not over mix the meatloaf mixture. Over mixing will create a dense, gummy texture. We are going for a light and fluffy texture.
2.Lightly grease your pan. You can use a baking pan or a springform pan. The meatloaf will produce a substantial amount of melted fat, based on the fat % in your meat so you do not want to over grease the pan.
3.Evenly spread the meatloaf in the pan, You can use a baking pan or springform pan– do not overfill. If you over fill your pan you will have a mess. The melted fat will overflow onto your potatoes. Yuck!
4.Place the meatloaf pan (in sling) on top of the trivet. Try to get it to sit as level as possible.
5.Close the Ninja Foodi pressure cooker lid and set to high for 30 minutes. Set the valve to the “seal” position. Cook for 30 minutes. When the timer goes off, natural release for 10 minutes. After 10 minutes, quick release the remaining pressure and open the Ninja Foodi.
6.Carefully remove your meatloaf from the Ninja Foodi. This is where the silicone sling or foil comes in very handy!.Remove the extra grease from the pan around and on top of the meatloaf. You can use a turkey baster for this….or carefully pour it into the trash. Do not pour in the sink. The fat will clog your pipes.
7.Evenly coat the top of the meatloaf with the topping.- instructions below
8.Make mashed potatoes using instructions above. Once potatoes are finished, remove them from the Ninja Foodi pot.
9.Place trivet or metal rack (if you use a silicone sling you don’t need to use a trivet or rack as the sling is already lifted off the bottom of the pot) back into Ninja Foodi pot.Put the meatloaf (in a sling) back into Ninja Foodi.
10.Cook on “broil” for 5-10 minutes. When the topping has reached your desired color, remove meatloaf from Ninja Foodi. Slice and serve with mashed potatoes.
Topping
1.Mix ketchup, bbq sauce, mustard and brown sugar together.
2.Set aside until it’s time to top the meatloaf!

- 2 Pounds of potatoes

- ยฝ Cup of Milk
- 2 Tablespoons of butter

Meatloaf Mixture
- 2 Pounds of ground beef
- ½ Cup of plain breadcrumbs
- โ Cup of milk
- 2 Eggs
- โ Cup of ketchup
- ½ Cup of sautéed onion- chopped
- 2 Tablespoons onion soup mix
- ½ Teaspoon garlic powder
- 1 Teaspoon minced garlic
- 1 Teaspoon paprika
- 2 Teaspoons Italian seasoning
- 2 Teaspoons parsley
- 1 Teaspoon salt
- ½ Teaspoon black pepper
Topping- I would recommend doubling this recipe if you like to dip your meatloaf in the sauce! ๐
- โ Cup of ketchup

I’m not having very good luck with my new Foodi. I tried chicken fried steak last night and it was a disaster. Tonight I’m trying the meatloaf but after 30 min at high pressure it’s still raw inside. Is it meant to finish cooking under the broil? I put it back under pressure for another 10 min. We’ll see. I’m getting frustrated. Maybe I should only cook beans in it.

Oh no! I have not made chicken fried steak in the food since I use a pretty wet batter and I find that wet batters don’t cook well on the air crisp function (or any other functions). For the meatloaf, did you use the exact same amount of meat as I did in the recipe? Did you allow some of the pressure to naturally release? I’ve made meatloaf several times and never had an issue with it not cooking all the way. It will continue to cook while it is broiling, but not enough to cook it from raw in the middle.

I was a little afraid to make a meatloaf in my Foodi, but am so glad I tried it. This is a great recipe and will now be my “go to”. I didn’t do the potatoes, but am going to try them next time. I also used a different topping because my husband wasn’t sure about BBQ sauce on meatloaf. Next time though…..
