    Instant Pot Baked Apples

    It's the apple-picking season.  Do you know what that means?  It means that we go out for a fun-filled day of apple picking at the orchard and then come home with waaaaaaaaay too many apples.  While my family does eat a lot of apples, 2 bushels is just too many. 

    But, don't worry, we find a way to use them all up!  We dip a lot of them in caramel to make caramel apples and we usually make pull-apart monkey bread which is my favorite!!  This year, we tried something new.....Baked Apples!  Well, kind of baked.  We made Instant Pot Baked Apples and they turned out fantastic!

    Tips for this recipe:

    1.Do not place the apples in the water or in a steamer.  I learned this the hard way.  If you put the apples directly in the water or in a steamer basket that the water will get into, the apples will way overcook and turn to mush....watery mush.  It's not good lol.  I don't recommend this to anyone.  

    2. Be generous when you are cutting out the core.  The bigger the hole in the middle, the more sugary nutty goodness you can jam into the center.  To me, this is the best part!

    3. Be careful not to cut all the way through to the bottom of the apple when you are cutting out the core.  If you cut all the way through there won't be a barrier to keep the filling from coming out of the bottom of the apple. 

    4. Use whatever kind of apples you want.  Using a tart granny smith will give you a bit of a different flavor compared to the sweetness of the Honeycrisp.  Any will do.  Just use what you like and have on hand.

    Ingredients for Instant Pot Baked Apples:

    • 2 Large apples of your choice- cored.  Make sure to leave the bottom of the apple intact so that the filling does not come out of the bottom.
    • 1 ½ Cups water
    • ¼ Cup salted butter-softened
    • ¼ Teaspoon vanilla- I used vanilla bean paste 🙂
    • 1 Teaspoon cinnamon
    • 1 Tablespoon brown sugar
    • 3 Tablespoons chopped pecans

    How to make Baked Apples in the Instant Pot:

    1.Pour 1 ½ cups of water into the Instant Pot.

    2.Mix butter, vanilla, cinnamon, brown sugar and 2 tablespoons of pecans together.  Reserve remaining 1 tablespoon of pecans to add to the top.

    3.Fill cored apples with butter, cinnamon, brown sugar and pecan mixture.

    4.Once filled, top apples with remaining 1 tablespoon of pecans.

    5.Place apples into insert pan.  I used one of the pans that I use for pot in pot cooking but you could also use a springform pan. 

    6.If you are using a sling-place insert pan onto sling and lower into Instant Pot. If you are not using a sling- place trivet into Instant Pot and place insert pan on top of trivet.

    7.Close Instant Pot lid and move valve to "seal" position.

    8.Select pressure cooker function and cook on high pressure for 4-6 minutes based on how you like your apples.  4 Minutes will create a soft center with a dense outside.  6 minutes will create a soft center and outside.

    9.When timer beeps, allow pressure to naturally release for 4 minutes and then quick release remaining pressure.

    10.Remove lid and carefully lift apples out of Instant Pot.

    Serve and Enjoy!
