My goal was to make this recipe softer, more like the Dole whip that everyone loves, only strawberry flavored. So, the ice cream should be more like a soft-serve texture. If you prefer a thicker, more scoopable texture, don't add liquid when re-spinning. For a soft and almost fluffy texture, re-spin a few times, adding liquid on each re-spin.
Since the recipe calls for such a small amount of lemon juice, lime juice can be used instead without it being very noticeable. You can use fresh or bottled lemon or lime juice.
Yes, just be sure to thaw them for a little while before adding to the blender with the other base ingredients. If you don't thaw the strawberries, they will be harder to fully incorporate with the other ingredients.
Mix-ins are such a fun way to take this recipe to the next level! After the cycle is done, you can add mix-ins like graham crackers, chocolate chips, or even fresh strawberry pieces to add a little something extra to every bite. To add mix-ins, use the mix-in function on your Ninja Creami and let the machine do the work. - 2% Milk – You can use any dairy or dairy-free milk you prefer. The higher the fat content, the creamier your Whip will be. Whole milk, Fairlife milk, oat milk, almond milk, or coconut milk all work. Just keep in mind that lower fat milks may result in a slightly icier texture.
- Half and Half – You can substitute heavy cream for an even richer and creamier result, or swap it for more 2% milk if you want to keep the calories lower. Using more milk instead of half and half will make the Whip a little lighter in texture.
- Fresh Strawberries – Fresh strawberries are strongly recommended for the best texture, but you can use frozen strawberries if that is what you have. If you use frozen, thaw them completely and drain the excess liquid before using them in the recipe. The texture may be slightly softer with frozen strawberries.
- Allulose Granular Sugar Substitute – Allulose is preferred in this recipe because it doesn’t taste fake, and it is a 1:1 ratio with sugar, so you don’t need to adjust the amounts in the recipe. You can use your favorite granulated sugar substitute or regular sugar as long as it is a 1:1 ratio with sugar.
- Lemon Juice – Fresh or bottled lemon juice both work perfectly fine here. The lemon juice is not there to make this taste lemony, it just brightens up the strawberry flavor and adds a little twist to the overall taste. Do not skip it!
- Vanilla Bean Paste – If you don’t have vanilla bean paste, you can use vanilla extract instead. Use the same amount.
- Guar Gum – If you don’t have guar gum, you can use xanthan gum instead at a 1:1 ratio. Do not skip the stabilizer entirely or your Whip may turn out icy.
Directions for Making the Ice Cream Mixture
- Pour the milk, half and half, strawberries, allulose, lemon juice, vanilla bean paste, and guar gum into a small blender and blend until all ingredients are fully combined. Pour the mixture into a Ninja Creami container.
- Freeze on a level surface for 24 hours. Your freezer should be between 9 and -7 degrees Fahrenheit.

Directions for Processing the Ice Cream Mixture
- After 24 hours, remove the Ninja Creami container from the freezer. If there is a large bump in the ice cream, melt or scrape the large bump so that the top is level.
- Place the Ninja Creami container into the outer bowl of the Ninja Creami and then process on “LITE ICE CREAM.”
- If you want the texture to be thick and scoopable, you likely won’t need a respin. But, if you want the texture to be more like soft serve, pour in a tablespoon or two of milk and respin. The more milk you add, the softer the texture will be.
