Coconut shows up in these recipes in a bunch of different ways. Some use canned coconut milk or coconut cream right in the base, while others get most of their coconut flavor from coconut extract or shredded coconut. So, even though they’re all coconut recipes, they don’t all taste or turn out the same.
If you’re looking for pineapple and coconut together, there are several options. Piña Colada Lite Ice Cream uses canned coconut cream and pineapple, Piña Colada Protein Ice Cream uses coconut extract and crushed pineapple to keep the protein up, and Piña Colada Sorbet uses pineapple and sweetened cream of coconut. Dole Whip is another pineapple option, but it also has banana, coconut milk, and lime.
There are plenty of other combinations too. Both Almond Joy recipes combine chocolate, coconut, and almonds, while Blueberry Coconut Frozen Yogurt uses blueberry and coconut yogurt with blueberries and shredded coconut mixed in. Strawberry Coco-Nut Protein Ice Cream goes in a completely different direction with strawberry, coconut, walnuts, and chocolate chips.
Top Tips
- Pay attention to which type of coconut product the recipe calls for. Coconut milk, coconut cream, and cream of coconut are different products. Cream of coconut, like Coco Lopez, is sweetened, while canned coconut milk and unsweetened coconut cream are not. Using the wrong one can change both the sweetness and texture.
- Add shredded coconut as a mix-in when the recipe calls for it. Blending shredded coconut into a base before freezing can leave little pieces throughout the ice cream and sometimes create a grainy texture after processing. Adding it during the MIX-IN cycle keeps more of the coconut texture.
- Coconut extract is an easy way to add more coconut flavor without changing the texture. You only need a small amount because it’s concentrated. Several of these recipes use coconut extract in the base and shredded coconut as a mix-in so you get both the flavor and texture.
- Toast shredded coconut when you want a stronger coconut flavor. Put it in a dry skillet over medium-low heat and stir it frequently because it can go from toasted to burnt pretty quickly.
- Don’t assume every coconut recipe needs coconut milk or coconut cream. Some of these recipes use almond milk, protein shakes, yogurt, or another base and get their coconut flavor from extract or mix-ins instead. Follow the individual recipe rather than swapping coconut products automatically.
Ninja Creami Almond Joy Ice Cream
This community recipe combines all three of the flavors you’d expect from an Almond Joy: chocolate, coconut, and almond. The chocolate ice cream base gets extra coconut and almond flavor, so you aren’t relying on the mix-ins alone to make it taste like the candy bar.
