Vanilla pudding ice cream might sound simple, but it’s SO good. It has that classic vanilla pudding flavor from the sugar-free vanilla pudding mix, and it turns into a really creamy, smooth ice cream in the Ninja Creami.
The sugar-free vanilla pudding mix does a couple of things in this recipe. First, it adds that classic vanilla pudding flavor that makes this recipe unique. Second, it acts as a stabilizer to keep the ice cream thick and creamy instead of icy. Make sure to use INSTANT pudding mix, not cook-and-serve, and definitely not premade pudding cups.

You can adjust the sweetness of this recipe based on your preference. Pudding mix is already pretty sweet on its own, so the allulose bumps up the sweetness just a little more to get it right. If you like your ice cream less sweet, cut back on the allulose. If you like it sweeter, add a little more before freezing.

This vanilla pudding base is SO versatile and works with so many different mix-ins. You can add chocolate chips, crushed Oreos, sprinkles, chopped Reese’s cups, cookie dough pieces, or even brownie bites. It’s basically a blank canvas for whatever ice cream flavor you want to make.

Vanilla might sound boring compared to other flavors, but it’s a classic for a reason. It’s the kind of ice cream that goes well with everything, from a slice of pie to a warm brownie to fresh berries. And with this Ninja Creami version, you get all of that classic vanilla flavor with a fraction of the calories of store-bought vanilla ice cream.
Tips for making Ninja Creami Low Calorie Vanilla Pudding Ice Cream
Yes, regular vanilla pudding mix works just as well as the sugar-free version. Just know that using regular pudding mix will add extra sugar and calories to the pint.
No, this recipe needs INSTANT pudding mix. Cook-and-serve pudding will not give you the same texture or flavor, and premade pudding cups will not work either.
Absolutely! Chocolate, cheesecake, banana cream, pistachio, butterscotch, and white chocolate pudding mixes all work great in this recipe. Just swap the vanilla pudding mix for whatever flavor you’re in the mood for.
So many! Chocolate chips, crushed Oreos, sprinkles, chopped Reese’s cups, cookie dough pieces, chopped brownies, or even leftover cake or pie. This vanilla base is the perfect base recipe!
This is really common with Ninja Creami ice cream recipes! If it looks dry or like sand, pour in a tablespoon of milk down the center and re-spin. If it looks more like little balls of ice cream, just re-spin without adding any liquid. You may have to re-spin a couple of times to get the right creamy texture.

Ingredient tips and substitutions
The full ingredient list is at the bottom of this post in the recipe card.

- 2% Milk: You can use any dairy or non-dairy milk in place of 2% milk, just know that the higher the fat content, the creamier the texture (whole milk, Fairlife, oat milk, almond milk, or coconut milk all work).
- Half and Half: Heavy cream can be used for an even richer ice cream, or you can use more 2% milk or whole milk if you want a lighter version.
- Sugar-Free Vanilla Instant Pudding Mix: Regular vanilla pudding mix works if you don’t need sugar-free, and you can also swap in another flavor like chocolate, cheesecake, banana cream, or pistachio to change up the flavor (do NOT use cook-and-serve pudding or premade pudding).
- Allulose Granular Sugar Substitute: You can use your favorite granulated sweetener that is a 1:1 ratio with sugar, like monk fruit sweetener or real sugar.
- 2% Milk (Optional): This only gets used if the ice cream looks like sand after the first spin, and any dairy or non-dairy milk works in its place like whole milk, skim milk, heavy cream, almond milk, coconut milk, oat milk, or Fairlife milk.
Directions for Making the Ice Cream Mixture

- Pour the milk, half and half, pudding mix, and allulose into a small blender and blend until all ingredients are fully combined. Pour the mixture into a Ninja Creami container.
- Freeze on a level surface for 24 hours. Your freezer should be between 9 and -7 degrees Fahrenheit.
Directions for Processing the Ice Cream Mixture

- After 24 hours, remove the Ninja Creami container from the freezer. If there is a large bump in the ice cream, melt or scrape the large bump so that the top is level.
- Place the Ninja Creami container into the outer bowl of the Ninja Creami and then process on “LITE ICE CREAM.”
- If the ice cream is dry or crumbly looking (like sand), pour in a tablespoon or two of milk and then re-spin. If the ice cream looks more like little balls of ice cream, re-spin without adding liquid. You may have to respin a couple of times.
