If you love peanut butter but want something lighter than traditional peanut butter ice cream, you need to try this Ninja Creami low-calorie peanut butter sorbet. It's dairy-free, packed with real peanut butter flavor, and way creamier than you'd expect from a sorbet made mostly with water. Trust me, this one is worth waiting for it to freeze for 24 hours.

This recipe comes in at 300 calories, 25 grams of protein, 5 grams of sugar, 13 grams of fat, 80 carbs, 16 net carbs (total carbs-allulose) for the ENTIRE pint. See the recipe card at the bottom of the post for all nutrition facts.

A lot of people think you can't use water as the main liquid in a Ninja Creami recipe, and that's not exactly true. You definitely can't use ONLY water, but once it's blended with the peanut butter powder, allulose, guar gum, and salt in this recipe, it's not just water anymore. That combination is exactly what turns this into a genuinely creamy, scoopable sorbet instead of a block of ice.

This sorbet has a super smooth, creamy texture, which surprised me given there's no dairy in it at all. The peanut butter powder and guar gum work together to keep it from turning icy, so you end up with something that scoops and tastes like ice cream instead of a frozen block.

Ninja Creami Low Calorie Peanut Butter Sorbet

I used PB Fit peanut butter powder instead of regular peanut butter for this recipe, and that choice matters. Peanut butter powder gives you real peanut butter flavor without all the added fat and calories that come from using the real thing, which keeps this sorbet low calorie while still tasting like peanut butter.

Ninja Creami Low Calorie Peanut Butter Sorbet

Guar gum is doing a lot of work in this recipe. Since there's no dairy, protein powder, or pudding mix to help thicken things up, the guar gum is what keeps this sorbet from turning into an icy, crumbly mess once it's processed.

Ninja Creami Low Calorie Peanut Butter Sorbet

For mix-ins, I kept it simple with chopped peanuts, and they add a nice little crunch against that creamy sorbet base. Just be sure to chop them before adding them in, since the mix-ins function on the Ninja Creami pulverizes soft ingredients but doesn't break up anything hard.

Tips for making Ninja Creami Low Calorie Peanut Butter Sorbet

What texture is peanut butter sorbet?

Based on the ingredients, you would think that the peanut butter sorbet would be very icy and not creamy at all. Well, prepare to be amazed. Somehow, the Ninja Creami turns these ingredients into a super creamy peanut butter treat that you would never guess doesn't have any dairy. There's just the right amount of peanut butter flavor and the texture is AMAZING!

Can the peanuts be omitted from the recipe?

Yes, you can leave out the peanut mix-ins if you want an even lower calorie treat that has a smoother texture. But, the peanuts add great flavor and a nice little crunch.

I thought you weren't supposed to use water in Ninja Creami recipes...

You can't use ONLY water or have any areas in the container that have gaps filled with only water, like in between chunks of fruit. Once you mix the water with something that has fat, sugar (or a substitute), or dairy (or a substitute), it's no longer just water. Blending the base ingredients together with the water in this recipe creates a mixture that is not just water.

Can regular peanut butter be used instead of the peanut butter powder?

You can use regular peanut butter instead of PB Fit, but it will add extra fat and calories to the ice cream. If you swap it in, use it in place of the powder rather than adding it on top of the recipe as written.

Why is this recipe processed on the SORBET setting instead of ICE CREAM?

This recipe doesn't have any dairy in it, so the SORBET setting is the right choice here. Processing a dairy-free base like this one on ICE CREAM instead won't give you the same creamy result.

Ingredient tips and substitutions

The full ingredient list is at the bottom of this post in the recipe card.

Ninja Creami Low Calorie Peanut Butter Sorbet ingredients
  • Water: This recipe uses water as the base liquid instead of milk or a protein shake, which is what keeps the calories so low. Once it's blended with the peanut butter powder, allulose, and guar gum, it's no longer just water, so there's no need to swap it out.
  • Allulose Granular Sugar Substitute: Feel free to use your preferred granulated sugar substitute or real sugar, as long as it's a 1:1 ratio with sugar.
  • Peanut Butter Powder (PB Fit): Use the peanut butter powder dry, don't reconstitute it with water first. Regular peanut butter can be used instead, but it will add extra fat and calories.
  • Guar Gum: If you don't have guar gum, xanthan gum can be used as a substitute.
  • Salt: Regular table salt works fine, but feel free to use your favorite fine salt instead.
  • Peanuts: Use chopped peanuts, salted or unsalted, whichever you prefer. Chop them before adding them since the Ninja Creami mix-ins function won't break down anything hard on its own.

Directions for Making the Ice Cream Mixture

Directions for Processing the Ice Cream Mixture

  3. If the sorbet is dry or crumbly looking (like sand), respin. You should not need to add any additional liquid during the respin. You may have to repeat this process a couple of times.
  4. Dig a well down the center and add the chopped peanuts. Process on "MIX-INS."

Recipes that use allulose:

Allulose is a low calorie sweetener that your body doesn't fully digest, so it provides only 0.4 calories per gram instead of 4. That's why the calorie total doesn't match what you'd expect from the carb count. Calories from allulose are calculated based on metabolized carbohydrates. Allulose contributes fewer calories than standard carbohydrates.
