I found the perfect way to get a ton of coffee flavor into the ice cream without it tasting watered down or feeling icy. I use it in almost all of my coffee-flavored Ninja Creami recipes.
A few of these are built directly around the protein angle, like the Mocha Espresso Protein Ice Cream and the Coffee Protein Ice Cream, both starting from a straightforward coffee-and-protein-powder base. The Coffee Toffee Protein Ice Cream takes a similar approach but adds toffee bits for some crunch and contrast.
The other two take the coffee flavor in different directions: the Coffee Smoothie Bowl is meant to be eaten with a spoon and toppings rather than scooped like ice cream, and the Espresso Sorbet-Low Calorie skips the protein-powder base entirely to stay lighter. Both still start from the same idea of freezing a concentrated coffee base solid before processing it into something creamy or scoopable.

What Kind of Coffee Works Best for Ninja Creami Recipes?
I like using instant espresso powder for a coffee base in the Ninja Creami, since it adds concentrated flavor without adding much liquid to the mix. The espresso powder is my secret ingredient for coffee ice cream. It adds a ton of coffee flavor! Brewed coffee works too, but because it’s mostly water, it can leave the base much icier once it’s frozen and processed.
How to Make a Coffee Base for the Ninja Creami
- Blend the coffee with the other ingredients. I prefer to use espresso powder because it’s an easy way to add a lot of coffee flavor without adding extra liquid. Add it to a blender with the other ingredients for your recipe and blend until everything is well combined. If you’re using brewed coffee instead, let it cool completely before blending it with the other ingredients.
- Pour the mixture into your Ninja Creami container and freeze for 24 hours. Put the container on a level surface in the freezer so the base freezes flat.
- Process using the setting that works best for the ingredients in your base. The setting you use will depend on the type of recipe you’re making and the other ingredients you’ve added. Don’t freeze and process just coffee and water. The base needs other ingredients such as sugar, dairy, or a thickener to make it appropriate for processing in the Ninja Creami.
- Add any mix-ins after you’ve processed the base. Make a hole down the center of the processed ice cream, add your chocolate chips, toffee pieces, or other mix-ins, and then use the Mix-In setting to mix them throughout.
Mix-In Ideas for Coffee Ninja Creami Recipes
- Chocolate-covered espresso beans. They add crunch along with an extra hit of coffee flavor.
- Toffee bits. A crunchy, caramelized contrast to the coffee base.
- Chocolate chips or chopped dark chocolate. A classic mocha pairing that works with almost any coffee base.
- Crushed graham crackers. Adds texture without adding more coffee flavor to the mix.
Top Tips
- Use instant espresso powder instead of brewed coffee if you want a stronger flavor. Brewed coffee adds extra liquid to the base, which can make it icier once frozen, while espresso powder concentrates the flavor without watering things down.
- Freeze the base a full 24 hours before running it through the machine. A base that isn’t completely frozen solid will process unevenly and can come out soupy instead of creamy.
- Add toffee bits, chocolate chips, or cacao nibs during the mix-in cycle, not before freezing. Mixing them in ahead of time means they just freeze into the base instead of staying separate and crunchy.
- Taste and adjust sweetness before freezing, since cold dulls how sweet anything tastes. A base that tastes right at room temperature can taste flatter once it’s frozen and processed.
- Re-spin with a small splash of milk or coffee if the texture comes out crumbly after processing. This is different from an icy texture, and it usually fixes a base that just needed a little extra liquid to smooth out.
