For the protein-focused recipes, I tried to keep the strawberry flavor up front instead of letting it get lost. Top Tips
- Use fresh strawberries over frozen when you can. Fresh strawberries add a freshness that you don’t get from frozen strawberries, especially when used as mix-ins.
- Pick the ripest strawberries you can find. Ripe berries are sweeter and need less added sugar to get the flavor where it should be.
- Remove the strawberry stems and leaves. Leaving the green tops on can leave bitter bits in the base, so take a minute to hull every berry first.
- Use a protein shake you actually like the taste of. If you don’t like the way it tastes as a shake, you’re not going to like it made into ice cream.
- Go easy on strawberry extract. A lot of strawberry extracts taste artificial. So, don’t add too much.
