White chocolate peppermint ice cream makes me think of the colder winter months….but it can be eaten all year round! To add to the peppermint flavor and provide a bunch of little crunchy bits, I used starlight mints. But, if you want to make it a little more festive, use candy canes during the winter holidays.
This recipe comes in at 304 calories, 8 grams of protein, 29 grams of sugar, 94 carbs, 46 grams of net carbs and 6 grams fat. See the recipe card at the bottom of the post for all nutrition facts.
Making low calorie Ninja Creami recipes can be a bit more challenging. Low calorie recipes tend to lower fat and sugar contents, which can make ice cream icy and and not as thick and creamy. It’s not quite as easy as just throwing together low calorie ingredients and hoping for the best. It takes some trial and error to come up with the ingredients and the right amounts of each. To help achieve a thick and creamy texture while keeping the calories below 300 calories per pint, I have used a combination of 2% milk, almond milk, allulose, and sugar free instant pudding mix.

One of the trickiest flavors of Ninja Creami ice cream to master, is mint. If you use the wrong type of mint or too much, your ice cream will taste like toothpaste. I almost NEVER use mint extract or spearmint extract because it tends to provide that toothpaste flavor. Instead, I use peppermint extract or mint chocolate chip flavor oil. A little goes a VERY long way. To ensure you have the right amount of minty flavor, always taste the mixture before freezing it.

If you’re looking for a low calorie AND high protein recipe, you can pretty easily sub out a couple of ingredients in this recipe. You can either swap out the milk and almond milk for a premade (vanilla or white chocolate flavored) protein shake or just add in a scoop of your favorite unflavored protein powder.

Tips for making Ninja Creami White Chocolate Peppermint Low Calorie Ice Cream:
No, you can't substitute those for the peppermint extract unless you want the ice cream to taste like toothpaste. Peppermint extract is minty but not overwhelmingly minty like toothpaste.
You sure can! Candy canes would make this recipe perfect for the winter holidays.
No, you don't need to use the food coloring if you don't want to. The food coloring doesn't add any flavor or change the texture. It just changes the color. You can skip it altogether if you prefer, or you can use a different color.
Yes, you can use Fairlife milk, if desired, in place of the 2% milk or almond milk. Fairlife milk will add more calories to the recipe but should not negatively impact the flavor or texture of the ice cream.
If you eliminate the 2% milk and use all almond milk (or other dairy substitute), the ice cream will be icy. You can technically, make it dairy free, but I would not recommend it without making adjustments to the other ingredients in the recipe.

2% Milk- To keep this recipe below 300 calories, I would not adjust the type or amount of dairy products used. If you don’t mind a few extra calories, you can use whole milk, half and half, or even heavy cream. But, I would not reduce the fat content in the milk as it will create an icy ice cream.
Unsweetened Almond Milk- Feel free to use your favorite dairy substitute like coconut milk, oat milk, cashew milk, etc. Just be sure you like the taste of the milk before using it in the recipe.
Allulose Granular Sugar Substitute- I choose to use allulose as it does not have a fake sugar taste and is a 1:1 ratio with sugar. You can sub out with your favorite sweetener like monk fruit, spelnda, stevia, agave, maple syrup, or sugar.
Pudding Powder- Instant, sugar-free pudding powder is used in the recipe. If you prefer, you can use pudding powder with sugar. Just be sure to use the instant pudding powder and not the cook and serve.
Peppermint Extract- Do not use mint or spearmint extract.
Food Coloring- Food coloring can be omitted or changed to another color if you want to be festive for other holidays.
Starlight Mints- You can even use candy canes if you want! Just be sure to break the mints up into small pieces. I put them in a ziplock bag and smash them up with a meat mallet to get them broken up really well.

- Pour the milk, almond milk, allulose, pudding mix, peppermint extract, and food coloring into a small blender and blend until all ingredients are fully combined. Pour the mixture into a Ninja Creami container.
- Freeze on a level surface for 24 hours. Your freezer should be between 9 and -7 degrees Fahrenheit.

Directions for Processing the Ice Cream Mixture
- After 24 hours, remove the Ninja Creami container from the freezer. If there is a large bump in the ice cream, melt or scrape the large bump so that the top is level.
- Place the Ninja Creami container into the outer bowl of the Ninja Creami and then process on “ICE CREAM.”
- If the ice cream is dry or crumbly looking (like sand), pour in a tablespoon or two of milk and then re-spin. If the ice cream looks more like little balls of ice cream, re-spin without adding liquid. You may have to respin a couple of times.
- Dig a well down the center of the ice cream, pour in the crushed mints, and process on “MIX-INS.”
