Watermelon is one of my favorite fruits. It’s so sweet and delicious, I just can’t get enough. I love using fresh watermelon in Ninja Creami recipes! The texture is great and the sorbet is super light and refreshing! I’ll show you how to use simple ingredients to make the perfect frozen treat!

You can make so many different flavors of sorbet in the Ninja Creami ice cream maker! Sorbet is usually mostly just fruit. Although, I do have some unique sorbet recipes that don’t have any fruit in them at all! Be sure to try my espresso sorbet and chocolate sorbet if you want a unique sorbet recipe. One of the easiest sorbet recipes to make is Ninja Creami pineapple sorbet made out of a can of pineapple.
Sorbet is usually dairy-free and vegan as it’s mostly just fruit. To make Ninja Creami sorbet, you can use fresh or frozen (thawed) fruit. One important thing to keep in mind when making sorbet is that a lot of the sweetness comes from the natural sweetness of the fruit. So, the sweeter and riper the fruit is, the sweeter the sorbet will taste. I highly recommend blending all ingredients together and then tasting it before freezing. If the sorbet mixture is not sweet enough, add extra sweetener before freezing.
Ninja Creami sorbet recipes have a great texture. However, sorbet does not have the same creamy texture as traditional ice cream or sherbet because there is no dairy and there is a high water content (from the fruit).

It’s pretty amazing that you can make watermelon sorbet from just 4 simple ingredients. One of the nice things about my Ninja Creami sorbet recipe is that the leftovers are just as good as the original serving. There are no mix-ins, which means you can process the leftovers again, using the sorbet button, and the leftovers will have the same texture as the sorbet did when you first processed it! Make sure that you use the sorbet button to process the leftovers and not the re-spin cycle. The re-spin button should only be used on ice cream that has already been processed and is soft, not on anything that is straight from the freezer.
Tips for making Ninja Creami Watermelon Sorbet (Low Calorie):
According to the manufacturer, 24 hours of freezing time is recommended. Many have been successful with a shorter freeze time but that will vary based on the ingredients in the recipe and the temperature of your freezer. It's always recommended to freeze for the full 24 hours and then adjust moving forward after you know how the recipes react with your ingredients and freezer. Just because it looks frozen does not mean that it is frozen solid in the middle or bottom of the container.
Yes, since this recipe does not have any mix-ins, you can freeze the leftovers and then process it again using the original function; sorbet. If the ice cream has mix-ins, those mix-ins will get completely combined with the ice cream base if processed again after freezing the leftovers. if you added mix-ins, let the leftovers thaw on the counter until it's scoopable again, instead of reprocessing.
I recommend removing the hard black seeds but you don’t need to remove the softer white seeds. The soft white seeds will break down when you blend them with the other ingredients.
While there is some sweetener added to the sorbet, you may need to add more, depending on how sweet the watermelon is. If the watermelon is very sweet, you don’t need to adjust the recipe at all. But, if the watermelon isn’t very ripe or sweet, you’ll likely want to add sweetener before freezing the sorbet. Blend, taste, check the sweetness and add more sweetener if needed, freeze, and then process.
If you can find frozen sorbet, you can use it as long as you thaw it enough to blend it with the other ingredients. Frozen watermelon is available to purchase, but it’s hard to find in the stores.
It is very common for the watermelon sorbet to separate in the container during the freezing process. To prevent this (as much as you can), immediately put the filled container into the freezer. You can even come back in about an hour and stir the mixture so that it is less separated.

- Fresh Watermelon- You can use seedless or regular watermelon with the black seeds removed. The sweeter the watermelon, the sweeter the sorbet will be.
- Allulose Granular Sugar Substitute- Allulose tastes very similar to sugar. But, if you prefer, you can use a different sugar substitute like monk fruit, Stevia, honey, maple syrup, agave syrup, or regular sugar.
- Lime Juice- I prefer to use fresh lime juice, but if you don’t have any fresh limes, you can use the packaged lime juice that comes bottled or you can use lemon juice.
- Salt- The salt helps bring out the sweetness of the watermelon. A little goes a long way. You do not want the sorbet to taste salty at all.
Directions for Making the Ice Cream Mixture
- Pour the watermelon, allulose, lime juice, and salt, into a small blender and blend until all ingredients are fully combined. Pour the mixture into a Ninja Creami container. Due to the air that is added while blending, the mixture might be slightly over the max fill line. It will deflate while freezing.
- Freeze on a level surface for 24 hours. Your freezer should be between 9 and -7 degrees Fahrenheit.
Directions for Processing the Ice Cream Mixture
- After 24 hours, remove the Ninja Creami container from the freezer. If there is a large bump in the sorbet, melt or scrape the large bump so that the top is level.
- Place the Ninja Creami container into the outer bowl of the Ninja Creami and then process on “SORBET.”
- If the sorbet is dry or crumbly looking (like sand), respin. You should not need to add any additional liquid during the respin. You may have to repeat this process a couple of times.

Add Food Grade Vegetable Glycerin To Make Leftover Ice Cream Scoopable Right Out of the Freezer
Per 16 ounce pint: *Add 1 Teaspoon to full fat/full sugar bases *Add 1.5 teaspoon to high protein bases *Add 2 teaspoons to low sugar/low fat lite bases. Freeze and process per the recipe. Take the leftovers out of the freezer and scoop without having to reprocess. ***This is a guideline and adjustments may be needed based on your recipe.
Original, Breeze, Swirl, and Deluxe Ingredient Measurements
Use the multiplier below to adjust quantities based on the machine that you own. ***If you have the Original, Breeze, or Swirl machine, which use 16 ounce containers, choose the 1X option. ***If you have the Deluxe or XL machine, which use 24 ounce containers, choose the 1.5X option.

- 16 Ounces (453 ⅗ g) Fresh Watermelon (About 2½ cups-Cut into 1-inch chunks-black seeds removed)
- 2 Tablespoons (2 Tablespoons) Allulose Granular Sugar Substitute
- 1 Teaspoon (1 Teaspoon) Lime Juice (Fresh or bottled)
- ⅛ Teaspoon (⅛ Teaspoon) Salt
Instructions
Make the Ice Cream Mixture
- Pour the watermelon, allulose, lime juice, and salt, into a small blender and blend until all ingredients are fully combined. Pour the mixture into a Ninja Creami container.
