Artichokes are one of my all-time favorite foods. I eat them all the time and have come to crave them. I don’t know if it’s the artichoke or the butter that I like the most, but I have to have them at least a couple of times a month. I love artichokes so much that it’s even part of the blogs logo! In this post I’ll show you how to skip the large pot on the stovetop and to use the Ninja Foodi Possible Cooker Pro to steam artichokes.
Making artichokes is not hard. It actually couldn’t be any easier. But, you have to have patience. If you don’t have patience, you’ll end up undercooking the artichokes which, when eaten, are very tough and not nearly as delicious as they can be when cooked properly.

This recipe was made using the Ninja® Foodi® PossibleCooker™ PRO.
Artichokes look a little scary to cook, but they really aren’t. There are several ways that you can cook artichokes, but the most basic and common way to cook an artichoke has to be steaming. Steaming artichokes helps soften the tough outer leaves so that they become tender enough to eat. When artichokes are cooked properly, the bottom half of the leaves become soft enough to scrape the meaty part off with your teeth. Once all of the leaves have been removed, you are left with the heart. The heart of the artichoke is where the bulk of the artichoke is that you will eat. Many people don’t eat the heart because you have to scrape off prickly, hairy leaves (choke) to get to it. But, the heart is the best part!

I’m more of an artichoke purist and prefer to eat just the artichoke with salted butter to dip it in. You’ll find a lot of restaurants fill and top the artichoke with a bread crumb, garlic, and butter mixture When done right, this can be delicious. But, I often find the bread crumbs to be overpowering and think it takes away more than it gives to the artichoke. So, I skip the toppings and just stick with the artichoke and melted butter.

An artichoke is a flower that you can eat. If left to grow, it will become a bright purple flower that pops out of the darker green leaves. When buying artichokes, look for super fresh artichokes that have not started to open. You want the leaves to be closed tightly, the stem should be moist, not dry. I prefer to buy the rounder artichokes instead of the more coned shaped ones. As far as I’m concerned, the bigger the better! Small artichokes are ok to add as an ingredient in other dishes, but the bigger artichokes are better for steaming and eating.

Tips for making Ninja Foodi Possible Cooker Artichokes:
To eat an artichoke, tear each leaf off, one at a time, starting from the outside and working your way in. Dip the end of the artichoke that was connected to the heart/stem in butter or another dipping sauce. Scrape the softer, inner part of the bottom of the leaf on the inside of your teeth. The soft, meaty part of the leaf should come off in your mouth. Discard the remainder of the leaf. Continue until you get closer to the middle of the artichoke and the leaves start to get very thin and much lighter in color.
Pull those thin leaves out and discard. You now should be left with a bunch of hairy, spiky looking pieces (choke) connected to the base of the artichoke. The easiest way to remove this is by gently scraping the prickles off with a spoon. Don’t scrape too hard or you will cut into the soft, meaty, heart. Scrape all of the prickles off.
You should now be left with the heart. Dip the heart in butter and take a bite! This is the BEST part of the artichoke. You can eat the entire heart but I don’t recommend eating the stem.
Steamed artichokes can be served as an appetizer, side dish, or as an entire meal. My favorite way to serve it is with seafood. The melted better that the artichokes get dipped in goes really well with crab legs or shrimp. It’s also very common to serve steamed artichokes before a nice steak or pasta dinner.
Leftover artichokes can be saved in an air-tight container in the refrigerator. Drain the excess water from the artichokes and refrigerate for several days. To reheat them, microwave until warm or you can even grill them! To grill the artichokes, cut them in half length-wise, remove the choke, drizzle with a little olive oil, salt, and pepper, and then grill, flesh-side down, until hot.
Artichokes do not have to be steamed. But, they do need to be cooked in such a way that the leaves soften enough to eat. You can grill the artichokes, but they need to be cooked first. You can saute or fry the artichokes, but they need to be cooked first. The easiest way to prepare the artichokes is to steam them first and then grill saute, or fry them.
You should always trim the stem before cooking an artichoke. Trimming the leaves is optional. If you plan on filling or topping the artichoke with something, you should trim the leaves to make that process easier and to provide a better presentation. If you plan on steaming and eating right away without filling or adding toppings, there’s no need to trim the leaves.
To trim the leaves, use kitchen shears to cut off the top third or half of each leaf.
Ingredient substitutions for making Ninja Foodi Possible Cooker Steamed Artichokes:

Artichokes- fresh, not canned or jarred. This recipe uses fresh, whole, artichokes. The artichokes that are jarred or canned usually are marinated and cooked artichokes and cannot be substituted for this recipe.
Garlic (Minced)- Fresh or jarred garlic
Butter (Melted-Salted)- I always use salted butter to dip artichokes in. But, if you prefer you can use unsalted or use clarified butter or garlic butter sauce instead. If you want to be a little fancy, you can make your own dipping sauce, aioli, or even mayonnaise.
Directions for making Ninja Foodi Possible Cooker Artichokes:
- Turn the Ninja Foodi Possible Pot Pro on STEAM for about 45 minutes for large artichokes. Actual cooking time will vary based on the size of the artichokes. The larger the artichoke, the longer it will take to steam it.
- Cooking time estimates:
- Extra small: 20-30 minutes
- Small: 35 minutes
- Medium: 40 minutes
- Large: 45 minutes
- Extra large: 1 hour
- Cooking time estimates:
- Pour 2 cups of water and 1 tablespoon of minced garlic into the Ninja Foodi Possible Cooker Pro and put the lid on.
- Prepare the artichokes by rinsing them and cutting the stem down (leave about 1 inch of the stem intact). If you prefer, you can trim the individual leaves down with kitchen scissors so they are about half the original length. Cutting the leaves provides a better presentation, makes the ends less pointy, and allows you to add toppings like bread crumbs and garlic. I don’t usually add toppings so I don’t usually trim the leaves.
- Once the Ninja Foodi Possible Cooker Pro has finished preheating, take the lid off and place the artichokes, stem side down, into the pot. The artichokes should be in the water but not fully submerged. If you prefer, you can use a steamer basket or rack to lift the artichokes slightly out of the water, but it’s not necessary.
- Put the lid on the pot and steam for 20 minutes to an hour, based on the size of the artichoke.
- Cooking time estimates:
- Extra small: 20-30 minutes
- Small: 35 minutes
- Medium: 40 minutes
- Large: 45 minutes
- Extra large: 1 hour
- The artichoke is cooked when you can easily stick a fork into the end of the stem and when the outer leaves easily separate from the stem when pulled.
- Cooking time estimates:
- Serve with melted butter and enjoy!
