Deviled Eggs- Instant Pot Recipe

One of my favorite side dishes or snacks on holidays is the deviled egg!  I only make them for holidays and find myself eating half a dozen of them at a time!  There’s just something so fantastic about about a chilled deviled egg.  This recipe makes them a little fun with the food coloring on the egg whites.  I can’t believe I HAVE NEVER THOUGHT TO DO THIS BEFORE!!  When you color the egg shells, you immediately lose all of the fun colors.  But now, you can keep the Easter fun all day long by coloring just the egg whites!  Who knew you could do this!!!???

Tips for this recipe:

  1. Make your hard boiled eggs in the Instant Pot!  They are so much easier to peel than on the stovetop.  This will help to create better looking deviled eggs.
  2. Be creative with your colors.  Try soaking the egg whites half in one color and half in another.
  3. If you are adventurous, you can use vegetables to dye your eggs instead of food coloring.
  4. Add whatever seasonings you prefer for your filling.  I like it a little sweet, so I add a little sugar. :)

How to Make Deviled eggs in your pressure cooker:

  1. Start by hard boiling your eggs in your pressure cooker.  Our easy recipe can be found here: Hard Boiled Eggs- Instant Pot Recipe.
  2. Once you have completely cooled your eggs, peel them and slice them in half lengthwise.
  3. Remove the yolks and place in a bowl.
  4. Combine all cooked yolks with mayonnaise, sugar, salt and pepper
    1. Use a whisk…it helps to break up the yolk the best
  5. Combine 1 cup of water in a mug with 6-10 drops of food coloring and stir
    1. The more food coloring you use, the deeper the color will be
  6. Place egg white halves in the mugs of colored water
    1. You can color up to 6 egg whites at a time in the same mug- based on the size of your mug
  7. Let egg whites soak in colored water for 2-5 minutes- based on the color that you are looking for
  8. Remove egg whites from mugs and rinse
    1. I did this by pouring out the mug of colored water and rinsing under the faucet
  9. Pat dry egg whites with a paper towel
  10. Place egg whites on serving tray
  11. Fill egg whites with egg yolk mixture
    1. I like to make them look a little fancy so I use a piping bag and tip.  A ziplock bag works really well too!  Just cut off the end of the bag to create an opening for the egg yolk mixture to come out of

Ingredients:

  • 12 hard boiled eggs. Recipe can be found here.
  • 3/4 cup of mayonnaise
  • 1/2 teaspoon sugar
  • paprika to sprinkle on top
  • pinch of salt
  • pinch of pepper
  • several mugs of warm water- 1 mug for each color of food coloring
  • liquid food coloring- your choice of colors
