Eating low calorie doesn’t have to be hard. The good news is you can still have delicious, creamy, thick ice cream, while sticking to a low calorie diet. I’ve perfected some basic recipes like vanilla and chocolate low calorie ice cream but have also created more complex recipes like chocolate brownie, birthday cake, pumpkin pecan, peanut banana crunch, blueberry cheesecake frozen yogurt, and cherry almond ice cream.
Making low calorie ice cream in the Ninja Creami doesn’t have to be hard. But, it is important to understand that you can’t just take a low calorie or no-dairy milk and freeze it. Yes, technically you’ll end up with ice cream. But, it will be very icy. You need to get the right amount of fat and other ingredients in the recipe to help create some creaminess.

Why make low calorie Ninja Creami ice cream?
Many people are trying to lose weight, trying to maintain their weight, or just want to eat a little healthier, but they don’t want to give up their sweet treats. There are low calorie sweets and ice creams available most grocery stores but they can be quite expensive, there isn’t a lot of variety in flavors available, and you don’t have full control over the ingredients that go into the ice cream.
Making your own low calorie ice cream with simple ingredients is a good way to achieve your nutritional goals, while controlling what goes into the ice cream. The flavor options are endless when you make your own low calorie Ninja Creami ice cream.
How to use the Ninja Creami to make low calorie ice cream.
- Start off by preparing your base recipe and pouring it into a Ninja Creami pint container. Be sure not to fill past the max fill line. If I’m making a base recipe that has several ingredients, I like to blend all ingredients together in a small blender before pouring them into the Ninja Creami containers. The base recipe for low calorie ice cream will likely be made of mostly liquid and fruit. I have found that a combination of dairy and non-dairy milk makes a good, creamy, ice cream base. Depending on the recipe, it will likely also have flavor extracts, stabilizer, or additional sweetener.
- Make sure the top of the mixture is level and then freeze on a level surface for 24 hours. The freezer temperature should be between -7 and 9 degrees Fahrenheit. Based on the temperature of your freezer and the ingredients used, you may be able to freeze for a shorter period of time.
- Remove from the freezer and place into the Ninja Creami ice cream machine. Choose the appropriate Ninja Creami process (found in the recipe instructions) and process.
- Once the process has finished, remove the container from the machine. If the ice cream is dry and crumbly (like sand), pour 1-2 tablespoons of liquid into the ice cream and then process on the respin cycle. If the ice cream is more like little balls of ice cream, re-spin without adding any liquid. You might need to complete this process more than once. ***If you are going to be adding mix-ins, it’s not recommended to re-spin multiple times or add much liquid before the mix-ins process as the mix-ins process will continue to spin the ice cream and it might become too soft.
- If you would like to add mix-ins to your low calorie Ninja Creami ice cream, dig a hole down the center of the ice cream, if there is not already one there, and pour in your favorite mix-ins. Put the ice cream back into the machine and process on mix-ins.

Mix-in ideas for Ninja Creami low calorie ice cream
Fruit– You can add fruit like strawberries, peaches, blueberries, or raspberries during the mix-ins process. Be sure to cut the fruit into small pieces. I prefer to use fresh fruit as a mix-in, but you can use small pieces of frozen fruit or freeze dried fruit as a mix-in.
Your favorite granola– Using granola is a great way to add texture to ice cream.
Sugar-free cookies and candy- Adding small pieces of sugar-free cookies (or cookie dough) and candy (chocolate chips) to a ice cream can add texture and additional flavor to any ice cream. ***Sugar-free cookies and candy can be found in the same aisles as the kind that has sugar in it. A popular brand of sugar free cookies is Voortmans. There are a variety of flavors available.
Individual packages of mini cookies, muffins, and cakes- Using the individual packages of miniature sized snacks helps the snacks last longer (you don’t have to open an entire package of cookies or cakes all at the same time) and the small sizes make it easier to add to the ice cream.
The flavor combinations are endless when you start adding mix-ins to protein ice cream.
Why do so many low calorie recipes use allulose instead of sugar?
Please consult with your doctor before making any changes to your diet. The following information is provided for informational purposes only and not medical advice or suggestions.
Sugar has a lot more calories than allulose (little to no calories) and allulose tastes very similar to sugar without tasting like fake sugar. Allulose is usually a 1:1 ratio to sugar, which makes it easy to measure and substitute in recipes. If you choose to use another sugar substitute, check for sweetness before freezing the ice cream base.
Allulose is a 0 net carb food, which means that there are technically carbs in allulose, but the body does not metabolize them. This makes allulose a good option if you are trying to make low calorie or low net carb ice cream.
Sugar vs. Allulose Comparison (estimate)
- 1 tablespoon of sugar has 12 grams of carbs, 12 grams of net carbs, and 46 calories.
- 1 tablespoon of allulose has 10 grams of carbs, 0 net carbs, and 0 calories.
Ninja Creami LOW CALORIE Recipes
I have pulled together a bunch of low calorie Ninja Creami recipes. To be considered low calorie, they need to be 300 calories or less, for the entire pint. Most recipes below use allulose instead of sugar. Many recipes contain dairy, dairy substitutes, or a combination of both. Some recipes use a protein shake or powders.
I’ve tested these recipes with different variations of dairy and dairy substitutes. While you can substitute the dairy products used in each recipe, the final result will vary. Higher fat content dairy/dairy-free milk will provide a creamy texture, while lower fat dairy/non-dairy can create an icy texture.

Add Food Grade Vegetable Glycerin To Make Leftover Ice Cream Scoopable Right Out of the Freezer
Per 16 ounce pint: *Add 1 Teaspoon to full fat/full sugar bases *Add 1.5 teaspoon to high protein bases *Add 2 teaspoons to low sugar/low fat lite bases. Freeze and process per the recipe. Take the leftovers out of the freezer and scoop without having to reprocess. ***This is a guideline and adjustments may be needed based on your recipe.
Original, Breeze, Swirl, and Deluxe Ingredient Measurements
Use the multiplier below to adjust quantities based on the machine that you own. ***If you have the Original, Breeze, or Swirl machine, which use 16 ounce containers, choose the 1X option. ***If you have the Deluxe or XL machine, which use 24 ounce containers, choose the 1.5X option.
Ingredients
Ninja Creami Low Calorie Base Recipe
- 12-16 Fluid Ounces (118 2/7 ml) Liquid (Dairy, non-dairy substitute, juice, water (Ex. whole milk, 2% milk, 1% milk, fat-free milk, Fairlife milk, heavy cream, protein shakes, coconut milk, almond milk, oat milk))
- Sweetener (Sugar or Sugar Substitute- 1 Tablespoon-½ Cup- Add Sweetener to Taste (Ex. allulose, monk fruit, stevia, splenda, sugar))
- Stabilizer (2 Tablespoons Instant Pudding Mix (with or without sugar) OR ¼ Teaspoon Guar Gum or Xanthan Gum, OR 2 Tablespoons Cottage Cheese, OR 2 Tablespoons Yogurt (can be Greek yogurt).)
- Flavor (¼ Teaspoon-1 Tablespoon Flavor Extract, Oil, or Powder (Ex. vanilla extract, cocoa powder))
Instructions
Prepare the Ice Cream Mixture
- Pour all ice cream base ingredients into a small blender and blend until all ingredients are fully combined. Pour the mixture into a Ninja Creami pint container.
- Freeze on a level surface for 24 hours. Your freezer should be between 9 and -7 degrees Fahrenheit. To avoid getting a bump on the top of the frozen mixture, freeze with the lid off of the container.
Process the Ice Cream
- After 24 hours, remove the pint container from the freezer.
- Place the pint container into the outer bowl of the Ninja Creami and then process on the appropriate Ninja Creami process. Higher fat content bases- process on ice cream. Lower fat content bases- process on lite ice cream. Water or fruit bases- process on sorbet.
- If the ice cream is dry or crumbly looking (like sand), pour in a tablespoon or two of liquid and then re-spin. You may have to repeat this process a couple of times. If the ice cream looks like little balls of ice cream and is not overly dry, re-spin without adding additional liquid. If you plan on adding mix-ins, it's not recommended to re-spin more than once or twice as the ice cream will continue to be spun during the mix-ins process. Overspinning the ice cream or adding too much liquid during a re-spin can create a softer and less scoopable ice cream.
- If you want to add mix-ins, dig a well down the center of the ice cream and pour in the mix-ins. Process on mix-ins.
- Remove the pint from the machine and enjoy!

Allulose is a low calorie sweetener that your body doesn't fully digest, so it provides only 0.4 calories per gram instead of 4. That's why the calorie total doesn't match what you'd expect from the carb count. Calories from allulose are calculated based on metabolized carbohydrates. Allulose contributes fewer calories than standard carbohydrates.
